I love decorating for every season, and oh how I LOVE JoAnn's for decor! I got this little sign & the eggs there for cheap, and I thought they turned out pretty cute. I also really like getting decorating ideas from BH&G & SL. I love SPRING so much!

WMU Missions Get-Together 2010

This past weekend, I went for the 2nd year with my church ladies to Gatlinburg for the WMU Missions Get-Together. We had a fabulous time of food, fellowship, & lots of learning. I'm already looking forward to next year. I LOVE these ladies!

the CUPcakery

On our way to the Brad Paisley concert, we finally found out where The Cupcakery was located. I was SO excited, so this week, when I was in Knoxville running some errands, I decided to drop by and bring home some yummy goodness. Some of the cupcake flavors they have, include: confetti, double chocolate, gold rush, peanut butter cup, tuxedo, cuppa coffee cake, & red velvet. They also have seasonal specials as well. I decided to go with red velvet(cream cheese icing, red velvet cake) & tuxedo(vanilla buttercream, dark chocolate cake). I let John T. choose which one he wanted because I could have ate both of them! He chose tuxedo, and I snuck a bite...was not disappointed!!

Chicken Nacho Bake

I found this recipe on the Kraft website. I have made a lot of recipes from Kraft, and I have never found a bad one. This one is probably my favorite, though, because of the ease & the taste. It was so good!

What You Need (this is for four servings):

4 small boneless skinless chicken breasts

1/2 cup salsa

1/4 cup Breakstones's (yes, the brand makes the difference) sour cream

1/2 cup crushed tortilla chips

1/2 cup Mexican style finely shredded four cheese

Preheat oven to 400 degrees. Place chicken on foil-covered baking sheet. Slice three cuts on top of each chicken breast.

Top each chicken breast with salsa, sour cream and tortilla chips.

Bake 20 minutes. Remove from oven; sprinkle with cheese. Bake an additional 10 minutes or until chicken is cooked through.

TIP: I also added a sprinkle of taco seasoning on each chicken breast before topping with salsa, sc, & tortilla chips. It really made a difference!

I'm back...finally!

I have taken an unintentional blog hiatus. Some of the causes of my absence: getting off work between 5-5:30, driving 40 minutes home, cooking supper, hubby time, Esther Bible study, Acteens, Dancing with the Stars, AI, way too many TV shows John T. & I just can't miss, repeat, working weekends, repeat...you get the picture! So...the next posts will be catch up posts that sum up our Spring 2010 so far! I'm gonna try to do a few posts at a time, and hopefully I will be caught up soon! I'm happy to be back! :o) (Dated 3/8/10, but really 4/27/10, just for my personal reference. I use this blog, as most of you do, as a scrapbook of our lives. :o) )

Hints of Spring & Brad Paisley

I have looked forward to this weekend since Monday, and the beautiful weather we are having today has made it even better. But...to catch my life up, last weekend, mom & I went to a coupon fair in Knoxville and got some really great ideas for coupon organization & even picked up a few coupons while we were there! Afterwards, we went to Hobby Lobby & JoAnn's to look at all of their spring decor & such. I picked up this wreath below, and I love it! It makes me look even more forward to SpRiNg!! I love Bath & Body Works candles, and these two make my house smell so good, even days after I have them burning. They also remind me of Spring & Summer!
Last night, John T. & I went to see Justin Moore, Miranda Lambert, & Brad Paisley in concert at Thompson Boling Arena in Knoxville. I had not been to a concert since I was in college, & the last one John T. went to was Kenny Chesney's concert at Neyland Stadium back in 2003, so we were definitely due! It was a really good show. This was one concert where I was actually excited to hear every act, not just the main one.

It was a great night!!

I'm going to spend the rest of this beautiful day organizing coupons, cooking supper (if it's good, recipe to follow) & grocery shopping with the hubby after the VOLS b-ball game against Mississippi State!
