Tailgating/Game Day Food {Taco Themed}

I am linking up with Kelly's Korner today to share my favorite tailgating recipes.

We are huge Tennessee Vol fans in our house, but we actually have never tailgated on campus. My favorite time to make tailgating/game day foods is on away game days.

Last Saturday, we played Georgia @ Athens, and I made these awesome mini tacos. I found the recipe on Pinterest, and it is probably the best recipe I have found yet!

I also bought a cute cookie cake at Kroger & had chips and salsa for a side. Everything was so good!

Mini Tacos

How you make them:
Pre-heat your oven to 350 degrees. Line a muffin tin with Won Ton wrappers (found these at Kroger). I used two wrappers, per each cup. I just laid them on top of each other, making a star-like shape. Fill each wrapper with taco seasoned ground beef. Top with your favorite shredded cheese. Bake for 8 minutes. Top with your favorite taco toppings! (We just left ours plain, but they would be great with sour cream, guacamole, or whatever else you like!

I also love to make taco soup on game days! It is just perfection for fall.

Here is my recipe, thanks to my great friend, Donna...

Taco Soup

How you make it:
Brown 1.5 lbs. of ground beef, drain. In a large pot, combine beef, pinto beans, stewed tomatoes, sweet corn, dark red kidney beans, rotel, taco seasoning & ranch dressing mix. Bring to a boil, then reduce heat and simmer for about an hour. Top with shredded cheese & tortilla chips. YUM!

Finally, I think this is the BEST recipe for chicken tacos. I love the idea of having any kind of taco on game day. I found this on one of my favorite blogs: Six Sisters' Stuff.

Slow Cooker Chicken Tacos (my revised version)
I actually made these tonight, and I just shredded a rotisserie chicken, seasoned it with taco seasoning, poured about 1/2 cup of Sticky Fingers BBQ sauce (Memphis Style) over it and let it cook in my slow cooker for about 1.5 hours. I have it on warm now, and it will be ready to go when my hubby gets home from work!
