What's for supper?
Poppyseed Chicken
3 chicken breasts, boiled and cut in small pieces
1 8 oz. sour cream (I don't use the whole tub, probably a little more than half
1 can cream of chicken soup
2 tablespoons poppyseeds (I just shake lots in)
1 sleeve Ritz crackers
1/2 stick of butter
I found this recipe for Poppyseed Chicken from Kelly's Recipes. Her recipe is for ~6 servings, but I cut mine down to ~4 servings (or 2 servings, if you have a hungry husband like me). It is such a great, yummy comfort food.
Ingredients
Mix the first 4 ingredients, and put in a baking dish. Cover with crushed Ritz crackers. Melt butter and pour on top. Bake for ~25 minutes at 350 degrees.

Pool Days...
On Wednesday, I got to babysit my dear little friend, Clay. It was a perfect day outside, so we decided to head to Tim & Lorrie's and have a pool day. Jayden, Clay, & I had a great time! Clay & I then went to Hillside Cafe here in Wartburg for lunch, and it was SO good! I can't wait to get to spend more time with him this summer!
Mr. & Mrs. Daniel Smiley
One of my best friends since elementary school, Brittany, got married last weekend to her love, Daniel Smiley. The wedding was in Decatur, TN, where Brittany grew up & everything turned out so beautiful. I was a bridesmaid & John T. was an usher in the wedding. Britt's colors were black, yellow, & white...the bridemaids wore black dresses & our bouquets were yellow & white daisies. They left on Sunday for Cancun, Mexico, and I hope they are having the time of their lives! Congratulations, you two!
